Grilled Bacon Wrapped Stuffed Peppers Recipe



I don't know about you but anything wrapped in bacon, I'll eat! Here is a recipe that is always a hit at our family cook outs. Enjoy!


Ingredients:

8 - yellow or jalapeno peppers
1 - can of crushed pineapple (drained) (or you can use fresh pineapple, just make sure it's finely chopped)
1 - 8oz package of shredded monterey jack cheese
1 - package of your favorite bacon
1 - bottle of your favorite teriyaki sauce marinade
     and bamboo skewers.

Directions:

Before anything soak bamboo skewers in water for 30mins.

Peppers:
  1. In a large pot, bring water to a boil (enough to cover the peppers).
  2. Cut ends of peppers off and scrape out the insides.
  3. Add peppers to boiling water and let boil for 5-7 minutes, then drain and let cool until they are cool enough to handle.
Filling:
  1. Combine pineapple and cheese in a bowl and mix thoroughly.
Assembly
  1. Stuff each pepper with enough filling to reach top.
  2. Wrap each pepper with 2 bacon strips. Wrap one bacon slice along the length of the pepper covering the filling and the other around the sides to secure the first.
  3. Grab 2 skewers and pierce it about half an inch from the top and bottom sides of the pepper. (You can add about 4 peppers to the 2 skewers so they line up just like the picture)
Cooking:
  1. Grill the peppers over medium heat coating them in the teriyaki sauce and flipping them about every 5 minutes.
  2. Once the bacon is thoroughly cooked you are done!
